Chocolate truffles are probably one of the easiest recipes to make that look like they took a lot of effort. They are super versatile and easily customized for holidays and special occasions.
Simmer the cream and add your chocolates to it. I mixed semi-sweet and milk chocolates.
Once the mixture is all smooth...
Oops, I accidentally poured some whiskey in. More than I should've.

But everything seems ok.
Once the mixture is cool, form chocolate balls and chill more. Then dip the balls into melted chocolate I like these. You can get them for cheap at Walmart.

I even poured some of the chocolate mixture into a heart cookie cutter on wax paper to make a heart shaped "truffle," then covered it in chocolate too.
Hard chocolate shell on the outside, soft chocolate on the inside...Opted to roll some of the chocolate balls in chopped nuts--so yummy!!
Chocolate truffles
Ingredients:
3/4 cup heavy cream
8 tbs butter
3 1/2 cups chocolate chips
Chocolate melts (2 or 3 bags)
4 tbs liquor (optional)
Directions:
1) Bring heavy cream to a simmer in saucepan. Add butter; stir until melted.
2) Add chocolate chips and stir until melted, then pour mixture into a glass dish or bowl to cool. Refrigerate until firm, then roll mixture into balls. Stick the balls back in the fridge for a little while if you plan on dipping them in melted chocolate, since the heat from your hands will have softened them up.
3) Heat chocolate melts in a bowl in 30 second intervals until melted, then use a fork to dip each ball into the chocolate. Let set on waxed paper.

*You can roll the balls in chopped nuts, coconut, or cocoa powder too. So many possibilities and different colors of chocolate! Mini cupcake liners make great truffle holders*
